Could it be because they resemble the fan shape of a dove’s tail? There might be more complicated answers, but occasionally the simple one works reasonably well.

Be that as it may.

Here’s a question: how was the pair of dove tail joints created to join the two pieces of wood sketched in the picture (first time I’m trying to upload a picture, hope it works correctly)?
